Who loves chocolate? Yeah, that's what I thought. Almost everyone does.
However, for those of us trying to pursue a healthy lifestyle, we find that we can't indulge guilt - free because of the ingredients in a chocolate bar. The ingredient list below is for a bar that is quite popular in Nigeria. Not terrible but definitely not a healthy bar.
Ingredients Declaration: MILK CHOCOLATE(SUGAR, COCOA BUTTER, CHOCOLATE, SKIM MILK, LACTOSE, MILKFAT, SOY LECITHIN, ARTIFICIAL FLAVOR), PEANUTS, CORN SYRUP, SUGAR, PALM OIL, SKIM MILK, LACTOSE, PARTIALLY HYDROGENATED SOYBEAN OIL, SALT, EGG WHITES, ARTIFICIAL FLAVOR.
So, what is the way out? Make yours of course, and control what goes into it.
The recipe I am going to share with you is easy to prep for, requires just 3 ingredients and can be made in a short period of time. Best of all, you can get the kids involved. It's summer and I know that a lot of parents are running out of ideas to keep the kiddies occupied. You are welcome :)
This way, your chocolate will not melt the instant you take it out of the freezer. If you live in a colder place, you can go with half and half of cocoa butter and virgin coconut oil.
You can do that in Nigeria as well, don't get me wrong. Just know that your chocolate will be softer.
So let's talk tools. I would have given you the measurements in cups and tablespoons but Cocoa Butter is not that easy to manipulate in its solid state so it is best to weigh things out. This will also help you if you want to scale things up or down.
You need to gather - A Spatula, Kitchen Scales, Heat Safe container (I used a Pyrex jug) and silicone molds.
The Cocoa Butter is melted in a water bath. Don't pop it into a microwave to melt it.
Not only may this lead it to your cocoa butter burning but will definitely lead to the reduction of the nutrients. A gentle water bath is a better way of melting butters.
Once it is melted, put the cocoa powder and honey in and mix. It mixes very very easily. This step takes less than a minute.
You can adjust the quantity of honey to suit you. I do not like mine sweet at all so I only use a little bit.
Want a variation? You can add nuts and even dried fruits at this stage. You can also be like @eyiyemiolivia and add some dried yellow pepper for a kick. I split my recipe in half and added desiccated coconut.
Just mix it all in as you did the honey and cocoa butter.
Pour into molds and refrigerate/freeze. I find that when I use just cocoa butter, this can be ready within 5 minutes. With silicon molds, these pop right out.
Don't forget to let your little elves lick what is left in the bowl....memories are made that way 🙂
Enjoy your guilt free dessert. Remember, eat just a little of this, the fact that it is "healthy" does not make it free of calories.
